SRI LANKAN CHICKEN
SPICY & FRAGRANT Shaped by its rich culture and tropical climate, Sri Lankan cuisine is known for its vast use of a wide array of herbs, vegetables, spices and fruits, all of which grow locally across the vibrant island. Curried dishes are often characterised by unique spice blends using cinnamon and black pepper, as well as the use of coconut and curry leaves, with fish and seafood widely used in place of meat. Our Sri Lankan Chicken typifies the light, coconut-fragranced curries of the area, equally as delicious with chicken as it is with white fish, prawns or even root vegetables.
DELICIOUS & RICH Hyderabadi cuisine is known for its skilled use of herbs and spices. The key to this dish is the infusion of tender lamb shanks in a delicious sauce with cassia, cardamom and nutmeg. This creates a truly indulgent feast that was typically eaten at breakfast or lunch! Although traditionally made with goat meat, lamb shanks work wonderfully to create a deep, rich dish, absolutely full of flavour. Sitting in a deliciously thick curry, our Lamb Shank is cooked low and slow to create a decadent, tender dish with meat that falls off the bone. Ideal for dinner parties or when you need a little comfort food.
CHICKEN TIKKA MASALA
CLASSIC FAVOURITE Perhaps one of the all-time favourites of curried cuisine on UK shores, Chicken Tikka Masala is a classic, creamy curry made with marinated, tandoor-cooked chicken, served in a spiced tomato-cream sauce. Its origins are much debated; some claim it to have been invented by a Bangladeshi chef in Glasgow in the 1970s, others suggest that it’s simply a variation on Indian Butter Chicken, adapted to suit British tastes. Whatever its roots, Chicken Tikka Masala is a real symbol of modern multicultural Britain, and a truly delicious dish suitable for any occasion.
FLAVOURFUL & DELICIOUS An unusual yet delicious dish, Egg Curry was first introduced to the Indian subcontinent during the British ruling in India; an amalgamation of Western and Eastern cuisine. Colonial Britons typically ate hard-boiled eggs alongside curries as a simple yet tasty breakfast or lunch dish, and so the Egg Curry was born. Now a staple dish across much of India, our Egg Curry offers a light yet flavoursome feast, with hints of coconut taking your taste buds back to its Southern Indian roots.
AUBERGINE & BUTTERNUT SQUASH DHANSAK
HEALTHY & COMFORTING Dhansak hails from the Parsi community of India, Zoroastrians who arrived from Persia to Western India around Mumbai. This dish consists of vegetables, which are cooked alongside lentils and flavoured with spices including cumin and ginger. By using lentils and a number of spices, it combines elements of both Persian and Gujarati cuisine. Combining influences from both Persian and Gujarati cuisine, Dhansak is an iconic staple of Indian cooking and a firm favourite amongst foodies the world over. Combining soft lentils with juicy vegetables, tender meat and gentle spices, this wonderful dish is slow-cooked to offer a tender, hearty bite in every mouthful; perfect for warming up a cold night, or for when you fancy something with a little more gusto.
SWEET POTATO SAAG
HEALTHY & LIGHT A saag is a leaf-based dish best eaten with roti or naan bread Spinach is used most commonly in a saag, but other greens such as kale, mustard leaves or even broccoli work well too. Saag traditionally refers to green, leafy vegetables commonly found on the Indian Subcontinent and is one of the most versatile dishes in Indian cooking. Saag can take many forms in modern Indian cuisine, from a side-dish prepared classically with spinach and a variety of spices, to larger, curried meat dishes. Classically mild, our Saag combines the gentle spice of coriander, ginger and cumin with sweet potato for a warming, hearty dish; wonderful when served with a roti or chapati to mop up the sauce.
